This month’s Roaster’s Choice comes from the famous Isimbi region,
Harvest & Post-Harvest
Only ripe coffee cherries are handpicked and delivered to the washing station. The cherries are floated to remove damaged or low-density fruit, then pulped and fermented for 24 hours to break down the remaining fruit material.
After fermentation, the coffee is washed and separated by density before soaking for approximately 20 hours. This additional step helps improve cleanliness, quality, and shelf life.
The wet parchment coffee is then carefully hand-sorted and laid on raised tables to dry in the sun. Throughout drying, it is continually turned and inspected to remove any remaining defects. Once fully dried, the coffee is bagged and sent to RWACOF in Rwanda for final milling.
